I'm pretty sure you've heard of the SingTel Hawker Heroes challenge where famous Michelin-starred chef Gordon Ramsay engage in a face-off competition with our fellow Singaporean Hawkers. As an avid food lover, I can't help but to actually head down and try out all the 12 contestants' representations and find out what have I been missing so far!

So first up, I headed down to try out Eng Ho Fried  Hokkien Prawn Mee @ Teck Ghee Square.

I went there right after my work so I reached at about 7 pm, after a bus ride of 4 stops. So for this peak period, I waited for about 20 minutes for the food. The hawker chef cooks the noodles in batches because there are simply so much orders at one time. Personally, I find the place a little inaccessible to the public that do not stay in Ang Mo Kio. But after trying the hokkien mee, I have to say it is indeed worth it to drop by once in a while and savour one of the best hokkien mee in Singapore.

The very first thing you might notice is the choice of noodles the Hawker has decided to use. Instead of the usual thick tranparent noodles often used in Laksa, Eng Ho Fried Hokkien Prawn Mee used thin bee hoon instead. For this, I like the different texture and I could easily distinguish between the yellow thick noodles and the thin white been hoon.

Next you'll find the version of Hokkien Mee to be wetter with lots of moisture locked in the noodles through the process of simmering the noodles. The hawker prepares a wholesome pool of broth using prawns as the main ingredient, integrates them into the noodles in his huge wok, and after which allows it some time to simmer under a well-controlled fire source.

I presonally enjoy the the wetter version of the hokkien mee because it doesn't taste too dry. The soup sauce makes every mouthful of noodles really silky smooth and there was no need for effort to chew before the noodles glide down your throat.

Broth aside, the Hokkien Mee comes with fresh ingredients like thin pork slice (I had only a piece in my plate) and a few pieces of fresh prawns and sotong slices. The ingredients were all fresh enough for a good hawker standard.

Mix the sambal chili sauce into your noodles for an enhanced taste

    1. Hey Ken!

      Where are you from? :)
How about Singapore's chicken rice or char kway teow?! :D

  3. Hokkien Mee! Yes i personally prefers the wetter version too! Broth is important, not to forget the the pork belly slices and fried lard to finalize an authentic hokkien mee! Topping up with sambal chilli to spice up the whole dish! (Can forget about those that adds in fishcakes slices to substitute off the pork slices for cost cutting)

    1. Haha ahh I really love the wetter version! Pork belly slices are nice to have but hawkers either skipped them or place a few slices.. like that one I had here, there's only 1 slide -_-"
